Spaghetti Carbonara

A classic Roman pasta with creamy egg sauce, crispy pancetta, and loads of parmesan.

Ingredients

  • 200g spaghetti
  • 100g pancetta or guanciale
  • 2 large eggs
  • 50g parmesan, grated
  • 2 cloves garlic
  • Salt and black pepper

Instructions

    Cook spaghetti in salted boiling water until al dente.

    Fry pancetta with garlic until crispy.

  3. 3

    Whisk eggs with parmesan and plenty of black pepper.

  4. 4

    Drain pasta, reserving a cup of pasta water.

  5. 5

    Off the heat, toss pasta with pancetta, then egg mixture, adding pasta water to loosen.

    Serve immediately with extra parmesan.
