Roasted Tomato Soup

Deep, rich tomato soup made with oven-roasted tomatoes, garlic, and fresh basil.

Ingredients

  • 1kg ripe tomatoes, halved
  • 1 whole garlic bulb
  • 2 red onions, quartered
  • 500ml vegetable stock
  • Fresh basil
  • 3 tbsp olive oil
  • Salt and pepper

Instructions

    Preheat oven to 200°C.

    Place tomatoes, onions, and garlic on a tray, drizzle with oil and roast for 35 mins.

    Squeeze garlic from skins into a blender with tomatoes and onions.

    Add stock and blend until smooth.

    Heat in a pan, season, and stir in fresh basil.

    Serve with crusty bread.
